Highland Farms was started in the spring of 2017. We initially wanted to obtain beekeeping information from a parent who was a beekeeper for many years prior to his retirement. After a few instructional sessions over our first hive, we quickly determined we wanted and needed a second hive. That first year we harvested about 11 gallons of honey which is equivalent to approximately eighty-eight 16-ounce jars. We
were amazed with the outstanding flavor of the honey which was light with a hint of mint flavor. The hint of mint flavor comes from the variety of perennial plants in the garden and nearby yards.
Our neighbor rapidly became interested in the hives. During our second year they started beekeeping as well. With the success in their first year, they added additional hives.
Our combined operation has grown to several hives with the honey still being light and maintaining the hint of mint flavor. Our thanks to the hard-working bees that produce the bounty of honey. Our interest in beekeeping has grown from collecting honey to also helping the bee population which has
been declining. Honeybees are important pollinators which is critical to our food supply. We do not use any harmful chemicals in our garden. We have encouraged and succeeded in having our neighbors with gardens to do the same.
